My Ultimate Bowl of Mixed Nuts

Give me a bowl of mixed nuts and I will pick all the cashews out every time, little did I know that cashews are a super food!

Cashews are packed with good nutrition and that fact alone makes them delicious! These nuts are full of zinc, calcium, iron, potassium, copper, manganese, selenium, phosphorus and magnesium. They are an excellent source of vitamin K and folate, and contain amazing amounts of tryptophan which can help depression, stabilizing thoughts and moods. In one serving of cashews, you can get 10% of your daily value of iron.

Because of cashews mild flavor, rich oil and smooth texture, they are also fantastic candidates for dairy free recipes.  Once they are ground down, they can be used for anything from a whipped cream substitute to a delicious cashew butter.
